It is mild, topping out near 4,000 Scoville, and it is prized for flavour rather than heat: fruity and warm, the seasoning the region reaches for where others reach for black pepper. Harvest comes at the end of summer, and in September the villages hang the pods in long strings down the fronts of the houses to dry, which is the picture most people have seen of it. Ours is the variety, grown here in South Texas.
