Tiny upright red pods, sharp and smoky with a nutty finish, on a wild-type chile of northern Mexico and the Texas borderlands. It grows semi-wild across that range and has been picked rather than farmed for most of its history.The heat arrives fast and leaves fast, which is a genuine difference from a chinense of the same rating and the reason pequin turns up in vinegars, table sauces and salsas rather than in anything slow-cooked.Pods are small enough that harvesting is the real work. Birds will help themselves if you let them, which is exactly how the plant intends to be treated.
