Rocotos are the Andean branch of the genus, Capsicum pubescens out of Peru and Bolivia, an ancient domesticate that prefers cooler conditions than most peppers at 60 to 75F in partial to full sun. Pods ripen red in a blunt apple or bell shape with a matte, powdery finish, and they carry 30,000 to 100,000 SHU with a burn that lingers.
